Thanksgiving is a national holiday for the United States and celebrated on the fourth Thursday of November. Here’s an alternative cranberry sauce recipe, which also suits our own traditional Christmas dinner.

Thanksgiving is a national holiday for the United States and celebrated on the fourth Thursday of November Traditional food is served, normally roast turkey and trimmings, with pumpkin or apple pie to follow.

I have offered an alternative cranberry sauce as a delicious condiment, which also suits our own traditional Christmas dinner.

Cranberry Sauce

1kg cranberries

300g caster sugar

250ml port

1/2 orange

1/2 cinnamon stick

1 star anise

1/2vanilla pod

Place cranberries in a large pot with the sugar and port.

Zest the orange and then cut in half and add all to the pot.

Break up the cinnamon sticks and place in muslin with the star anise and split vanilla pods. Tie up and add to the pot.

Bring slowly to the boil, stir and let simmer until thick enough.

Taste, check it’s not too sweet or too sour and cool down.
