Kingscote Estate dishes up Italian and Japanese cookery courses for 2016 with Ursula Ferrigno and Jethro Carr

Kingscote Estate’s initial cookery line-up for 2016 features Italian and Sushi cookery classes. Cento per Cento Italiano covers Italian classics with Ursula Ferrigno. Jethro Carr will be running a Sushi Masterclass.

Ursula Ferrigno is an acclaimed and experienced food writer and chef with a passion for teaching and a love of all things Italian and healthy. Cento per Cento will be covering the rudiments of proper Italian food. Ursula’s menu includes:

• Luscious, creamy risotto, including brodo

• Gnocchi three-ways

• Pasta hand dried and hand cut – tortellini, ravioli, tagliatelle

• Pasta frolla for crostata (seasonal tart)

Sushi Masterclass with Jethro Carr - 24 February

Jethro Carr set up Kitchen Academy in 2002 as a mobile cookery school. With health and food becoming more topical, Kitchen Academy captured the imagination of the public and has worked at festivals, events and academia across the UK. Having mastered a range of Japanese dishes, Jethro will be showing what it takes to become a sushi master. The course covers a wide range of sushi preparation:

• Sumeshi (vinegared rice)

• Norimaki (simple rolled sushi)

• Gunkanmaki (battleship rolls)

• Uramaki (inside-out sushi)

• Temaki (hand rolls)

• Fresh Wasabi Pesto with Panko Crumb Chicken

• Wasabi Buttered Steak

• Japanese Bloody Mary’s with Wasabi Cashews

Courses run from 9.30am to 4.00pm.

Kitchen Academy at Kingscote is an new cookery school at Kingscote Estate located in the stunning 15th century Tithe Barn. The state-of-the-art kitchen is equipped with AGA ovens and purpose-built mobile workstations. The cookery courses are designed to be accessible to all levels of ability. The 150-acre Kingscote Estate is an English wine producer and a venue for weddings, cookery and private hire.

Day cookery course price per person: £165 (including VAT).
